Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley
  • 2 Eggs
  • ¾ Cup Flour, all purpose
  • 3 Tsp. Baking Powder
  • 1/4 Cup Greek yogurt
  • ½ Cup Butter, melted
  • 1 Tbsp. Parsley, finely chopped
  • 2 Tbsp. Chives, finely chopped
  • 1 ½ Cup Shredded Mozzarella and Cheddar Cheese
  • ½ Tsp. Salt

What You Need

Preparation

  1. In a large bowl, add Riced Medley and microwave for 6 minutes, remove and let cool.
  2. Using a clean dishtowel, drain Riced Medley, and squeeze out as much water as possible.
  3. In a large bowl, add eggs, butter, Greek yogurt, and whisk well. Add Riced Medley, shredded cheese, salt and mix well. Then add flour, baking powder, parsley, chives, and mix all together, until all combined.
  4. Preheat oven at 400 degrees.
  5. Lightly spray baking pan with cooking spray, add parchment paper.
  6. Using an Ice Cream Scooper, Scoop Rice Medley Mixture and place on the pan and repeat until the batter is finished.
  7. Place in oven for 20 minutes, until cooked or slightly browned. Remove from heat and let it slightly cool, and ready to serve.
