Ingredients
- 1 Cup Harvest Fresh Spinach
- 1 Cup Harvest Fresh White Pearl Onions
- 454g Bag Shrimp, uncooked
- 454g Bag Seafood Mix
- 454g Bag Crab Claws
- 1 Lb. Mussels
- 1 Cup Vegetable Broth, or fish stock
- 2 Cans (398mL) Diced Tomatoes
- 3 Bay Leaves
- ½ Cup Fresh Basil, finely chopped
- ¼ Cup Olive Oil
- ½ Cup Wine
- 1 Tbsp. Salt
- 1 Tbsp. Oregano
- ½ Tsp. Black Pepper
Directions
- In a large pot, heat olive oil on medium heat. Add pearl onions sauté for 5 minutes. Add garlic, sauté until fragrant. Add diced tomatoes, vegetable broth, wine, salt, pepper, oregano, bay leaves, basil, mix well. Let simmer for 20 minutes, stirring occasionally.
- Add Shrimp, cook until pink, add seafood mix, cook for 5 minutes, add spinach, crab claws, mussels, mix well and place lid on top, reduce heat and simmer for 5 minutes.
- Remove from heat and ready to serve.
