Ingredients

  • 1 1/2 Cup Harvest Fresh Spinach
  • 1 Cup Flour, all purpose
  • 1 Cup Buttermilk
  • 1 Large egg, beaten
  • 1 Tbsp. Canola Oil
  • 1 Tsp. Baking Powder
  • ½ Tsp. Baking Soda
  • ½ Tsp. Salt
  • 2 Tbsp. Butter
  • Strawberries, Topping

What You Need

Directions

  1. In a blender, add Spinach, buttermilk, egg, oil, blend until combined and smooth.
  2. In a large bowl, add flour, baking powder, baking soda, and salt. Whisk together, until combined.
  3. Add spinach mixture into dry ingredients and whisk until smooth.
  4. In a pan or griddle, add butter, once melted, add pancake mixture, bake on one side, until bubbles and flip, bake other side, until golden brown.
  5. Repeat for each pancake. Top with strawberries and syrup, if preferred and ready and serve.
