In a bowl, add eggs, parmesan cheese, whisk until combined.
For Assembly: Add 1 pie crust as a base, add spinach mixture, mortadella, provolone cheese, Salami, provolone cheese, ham, ½ egg mixture, roasted peppers, and repeat for 2nd layer, then add Italian seasoning, and top with mozzarella cheese, top with 2nd pie crust, to seal and brush with egg wash.
Place in oven, and bake for 30 minutes, until golden brown. Remove from heat and ready to serve.
