On half of your Tortilla, place mozzarella cheese, spinach, red pepper flakes, oregano, top with more mozzarella cheese, feta, and garlic powder. Fold in half. Repeat for each Tortilla.
In a skillet on medium to low heat, add oil, quesadilla, cook until golden brown, approximately 4 minutes on each side. Repeat for each Tortilla. Slice in halves, and ready to serve with sour cream.
