Ingredients

  • 1 Bag Harvest Fresh Spinach, chopped,
  • 12 Cremini Mushrooms-medium size
  • ½ Tbsp. Butter
  • ¼ Cup Parmesan Cheese, grated
  • 1 Cup Mozzarella Cheese, shredded
  • 2 Garlic Cloves, minced
  • 1 Tsp. Italian seasoning
  • 4 Slices Bacon, finely chopped, crispy, + 1 Tbsp topping
  • ½ Onion, diced
  • 2 Tbsp. Olive Oil, divided
  • Salt and Pepper to taste

Directions

  1. Pre-heat oven at 410 degrees. Prepare a baking dish, lightly greased.
  2. In a skillet, over medium- high heat, add 1 Tbsp oil, onion sauté until translucent, garlic sauté until fragrant add Spinach, sauté until wilted, Remove from heat. Let cool.
  3. Wipe Mushrooms with a damp paper towel. Remove stems, carefully creating a cavity for the filling. Sauté chopped mushroom stems separately with butter, set aside.
  4. In a bowl, add sauteed Spinach, sauteed mushroom stems, mozzarella cheese, parmesan cheese, Italian seasoning, crispy bacon, mix until fully combined. Form into small balls.
  5. Place mushrooms cap side down, place a cheese ball in each cavity and drizzle stuffed mushrooms with 1 Tbsp. Olive Oil.
  6. Bake for 10-15 minutes, until mushrooms are tender, cheese is melted and golden brown. Remove from heat, garnish with crispy bacon and ready to serve.
