Ingredients

  • 1 Cup Harvest Fresh Spinach, sauteed and chopped
  • 1 Tbsp. Butter
  • 24- Wonton wrappers
  • 1 Cup, 250g Cream cheese, room temperature
  • 1 Can (14oz) Artichoke hearts in water, finely chopped
  • ½ Cup Sun-dried Tomatoes, chopped
  • ½ Cup Mayonnaise
  • ½ Cup Parmesan cheese, grated
  • ¼ Cup Shredded Mozzarella Cheese
  • 1 Tsp. Garlic powder
  • ¼ Tsp. Salt
  • ¼ Tsp. Black pepper

Directions

  1. Pre-heat oven to 350 degrees. Lightly grease a mini muffin tray with cooking spray.
  2. Carefully press each wonton wrapper in muffin tin, forming a cup. Spray the tops of wonton wrappers with cooking spray. Bake for 6-8 minutes, until golden brown.
  3. In a skillet, on medium to high heat, melt butter, add spinach, sauté spinach until wilted. Remove from heat and place in a bowl.
  4. In the same bowl mix all the remaining ingredients, until fully combined
  5. Once wonton wrappers are cooked, remove from heat and fill with 2 spoons of spinach cheese filling for each.
  6. Cover muffin tray with foil, bake for 10 minutes until bubbly and cheesy. Remove from heat and transfer on a wired rack, to keep crispy and ready to serve.

