Ingredients
- 1 Cup Harvest Fresh Spinach, sauteed and chopped
- 1 Tbsp. Butter
- 24- Wonton wrappers
- 1 Cup, 250g Cream cheese, room temperature
- 1 Can (14oz) Artichoke hearts in water, finely chopped
- ½ Cup Sun-dried Tomatoes, chopped
- ½ Cup Mayonnaise
- ½ Cup Parmesan cheese, grated
- ¼ Cup Shredded Mozzarella Cheese
- 1 Tsp. Garlic powder
- ¼ Tsp. Salt
- ¼ Tsp. Black pepper
Directions
- Pre-heat oven to 350 degrees. Lightly grease a mini muffin tray with cooking spray.
- Carefully press each wonton wrapper in muffin tin, forming a cup. Spray the tops of wonton wrappers with cooking spray. Bake for 6-8 minutes, until golden brown.
- In a skillet, on medium to high heat, melt butter, add spinach, sauté spinach until wilted. Remove from heat and place in a bowl.
- In the same bowl mix all the remaining ingredients, until fully combined
- Once wonton wrappers are cooked, remove from heat and fill with 2 spoons of spinach cheese filling for each.
- Cover muffin tray with foil, bake for 10 minutes until bubbly and cheesy. Remove from heat and transfer on a wired rack, to keep crispy and ready to serve.
