Ingredients
- 2 Cups Harvest Fresh Spinach
- 1 Cup Cottage Cheese
- 1 Cup Mozzarella Cheese, Shredded
- 1 Egg
- 1 Cup Flour, all-purpose
- 1 Tsp. Baking powder
- 1 Garlic Clove, minced
- 1 Tbsp. Olive Oil for frying, + 2 tbsp
- 1 Tsp. Salt
Directions
- Pre-heat oven at 375 degrees and line a baking sheet with parchment paper.
- In a skillet, add Olive Oil, sauté garlic, until fragrant, add spinach, sauté until wilted. Set aside and let cool slightly and finely chop.
- In a large bowl, add cottage cheese, olive oil, egg, mix until completely combined.
- In a bowl, add flour, baking powder and salt, gradually add cottage cheese mixture, mix until combined
- Fold in Sauteed Spinach and shredded mozzarella cheese.
- Scoop portions using a scooper and place on parchment paper.
- Bake for 15-20 minutes, cook until cooked and golden brown, remove from heat and slightly cool before serving.
