Using a circle cookie cutter, cut 6 circles out of each Puff Pastry Sheet. Set 12 circles aside. Spread Spinach filling over 6 and cover with the other circle half. Repeat for remaining 2 Puff Pastry Sheets. Making 24 circles.
Brush with egg wash, sprinkle with everything bagel seasoning.
Bake for 20 minutes, ready to serve hot or cold.
