Ingredients

  • 1 Bag Harvest Fresh Spinach
  • 2 lbs. ground meat mix (veal, pork, beef)
  • ½ Red & Yellow Bell pepper, finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ Cup breadcrumbs, Italian Style
  • ½ Cup Parmesan cheese, grated
  • ½ Cup Feta Cheese, crumbled
  • 10-12 Slices Prosciutto
  • 2 Eggs, lightly beaten
  • 2 Tbsp Tomato paste
  • 2 tbsp parsley, chopped
  • ½ Cup Basil Leaves, Fresh
  • 1 ¼ Cup Mozzarella Cheese, shredded
  • 1 tbsp olive oil
  • 1 Tsp salt
  • ½ Tsp pepper

What You Need

Directions

  1. Preheat oven to 350 degrees.
  2. Heat olive oil in a medium skillet over medium heat. Add onion, red and yellow pepper. Sauté, until onions are translucent. Add garlic and cook until garlic is fragrant. Add Spinach sauté, until wilted. Remove from heat, let cool.
  3. In a large bowl, add ground meat, breadcrumbs, parmesan, eggs, tomato paste, salt, pepper, parsley, sautéed spinach mixture and feta. Mix until fully combined.
  4. Lay out a large sheet of parchment paper on a clean surface. Place your meat mixture in the centre. Pat mixture down, form a rectangle. Approx. 8” w x 14” h.
  5. Top with prosciutto, basil, and mozzarella cheese, leaving border all around.
  6. Roll the meatloaf up, using the parchment paper for guidance.
  7. Press down on top seam to seal and press the ends together to seal.
  8. Place on a baking sheet lined with parchment paper.
  9. Bake for 1 hour, until cooked, remove from oven and let cool for 10 minutes, before serving.
