Ingredients

  • 1 Bag Harvest Spinach
  • ¼ Cup Onions, chopped
  • 2 Garlic Cloves, finely chopped
  • 2 Bell Pepper, sliced halves, seeded
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Butter
  • ¼ Cup freshly grated Parmesan
  • ½ Cup Ricotta Cheese
  • ½ Cup Crumbled Feta Cheese
  • ½ Cup. Mozzarella Cheese, divided
  • Salt, Sprinkle

Directions

  1. Pre-heat oven at 400 degrees F. Spray a baking dish with cooking spray.
  2. In a skillet, heat butter on medium to high heat, add garlic, sauté until fragrant, add onions, sauté until translucent, add spinach and sauté, until wilted. Remove from heat and set aside.
  3. In a large bowl, add Spinach mixture, add Ricotta, Feta Cheese, Mozzarella Cheese and Parmesan Cheese. Mix well, until combined.
  4. Brush Peppers with Olive Oil, sprinkle with salt. Fill each pepper with Spinach Cheese filling and top with Mozzarella Cheese.
  5. Cover baking dish with foil paper and bake for 20 minutes, remove foil paper and bake for an additional 15 minutes, until peppers are tender, and cheese is golden brown. Remove from heat and ready to serve.

