Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 ½ Cups Harvest Fresh Spinach, chopped
- ½ Can Mixed Beans, drained
- ½ Can Lentils, drained
- 1 Cup Coconut Milk, light
- 1 Cup Vegetable Stock
- 1 Tsp. Paprika
- 3 Tsp. Garlic Powder
- 2 Tsp. Onion Powder
- 1 Tsp Salt
- ½ Tsp Pepper
Salmon
- 4 pcs Salmon, Skinless
- Pinch Garlic Powder, Paprika, Salt and Pepper
Directions
- Pre-heat oven at 350 degrees.
- In a Large Baking dish, add all ingredients, except for the Salmon and mix until fully combined.
- Add seasoning on Salmon and place on top of Cauliflower Mixture.
- Bake for 45 minutes, bake until cooked. Remove from heat and ready to serve.
