Ingredients
- 1 Bag Harvest Fresh Spinach
- 6 Boneless Chicken Breasts, skinless
- 4 oz Cream Cheese, softened
- 1 Cup Parmesan Cheese
- 3 Tbsp. Olive Oil, divided
- 2 Green Onions, chopped
- 2 Garlic Cloves, minced
- 1 Tsp. Italian Seasoning
- 1 Tsp. Thyme
- ¼ Tsp. Salt
- ¼ Tsp. Pepper
- ¼ Tsp. Red Pepper Flakes
Directions
- Pre-heat the oven to 375 degrees. Prepare a baking dish lightly sprayed.
- Prepare 6 Boneless Chicken Breasts, cutting a pocket into each one. Set aside.
- In a skillet, over medium- high heat, add 1 Tbsp oil, onion sauté until translucent, garlic sauté until fragrant, add Spinach, sauté until wilted. Remove from heat.
- In a small bowl, add seasonings, salt and pepper, mix until fully combined, divide the mixture in half.
- In a large bowl, add cream cheese, parmesan cheese, spinach mixture, half of the seasoning mix. Mix well to combine.
- Rub 2 Tbsp oil on each chicken breast and season remaining seasoning mix. Stuff chicken evenly with spinach cream cheese mixture, repeat for each breast until filling is used.
- Place stuffed chicken breasts in baking dish. Bake uncovered for 30-45 minutes, until chicken is cooked, and golden brown. Remove from heat and ready to serve.
