Ingredients

  • 1 Bag Harvest Fresh Spinach
  • 6 Boneless Chicken Breasts, skinless
  • 4 oz Cream Cheese, softened
  • 1 Cup Parmesan Cheese
  • 3 Tbsp. Olive Oil, divided
  • 2 Green Onions, chopped
  • 2 Garlic Cloves, minced
  • 1 Tsp. Italian Seasoning
  • 1 Tsp. Thyme
  • ¼ Tsp. Salt
  • ¼ Tsp. Pepper
  • ¼ Tsp. Red Pepper Flakes

Directions

  1. Pre-heat the oven to 375 degrees. Prepare a baking dish lightly sprayed.
  2. Prepare 6 Boneless Chicken Breasts, cutting a pocket into each one. Set aside.
  3. In a skillet, over medium- high heat, add 1 Tbsp oil, onion sauté until translucent, garlic sauté until fragrant, add Spinach, sauté until wilted. Remove from heat.
  4. In a small bowl, add seasonings, salt and pepper, mix until fully combined, divide the mixture in half.
  5. In a large bowl, add cream cheese, parmesan cheese, spinach mixture, half of the seasoning mix. Mix well to combine.
  6. Rub 2 Tbsp oil on each chicken breast and season remaining seasoning mix. Stuff chicken evenly with spinach cream cheese mixture, repeat for each breast until filling is used.
  7. Place stuffed chicken breasts in baking dish. Bake uncovered for 30-45 minutes, until chicken is cooked, and golden brown. Remove from heat and ready to serve.
