Preheat Oven at 375, and lightly spray oven dish with cooking spray.
In a Skillet, on medium to high heat add 1 Tbsp. Butter, garlic and sauté the onions for 2 minutes, add Spinach, reduce to medium heat, and cook until all the moisture is then reduced.
In a large bowl combine Cream Cheese, Spinach, Sun-dried tomatoes, and Parmesan cheese, and mix well.
Season chicken filets with salt and pepper.
In a plate, add spinach cheese mixture in the centre of each chicken, spread evenly and roll over. Place in baking dish.
Brush Garlic hummus on top of chicken and sprinkle with Paprika, place in oven for 30 minutes, until cooked. Remove from heat and ready to serve.
