Ingredients

  • 1 Bag of Harvest Fresh Spinach
  • 4 Harvest Fresh Gourmet Garlic cloves, thinly sliced
  • 1 cup of Harvest Fresh Red Pearl Onion, thinly sliced
  • 1 ½ lbs Scallops, pat with a paper towel
  • ½ tsp Salt
  • ½ tsp Black pepper
  • 8 Lemon wedges
  • Cooking spray

Directions

  1. Spray the pan with cooking spray. Heat large pan on high.
  2. Add scallops to a pan, add salt and pepper and cook for 2 minutes.
  3. Turn over and cook for 1 minute. Remove from pan and keep warm.
  4. In a pan, add oil and onions, cook for 2 minutes. Add garlic and cook 2 minutes.
  5. Add the spinach in small batches, stir until its sautéed prior to adding remaining.
  6. Once cooked, place the spinach on a serving plate and place scallops on top. Add lemon wedges.

Tip: The trick to perfect scallops is to leave them alone once they hit the pan. Scallops will stick to the skillet at first then release once they sear.
