In a large bowl, massage chopped kale with olive oil and salt.
In a frying pan, on medium heat, add butter, once melted add onions sauté until translucent, add garlic sauté until fragrant, add peppers, sauté for 3 minutes, and add Chopped Kale, sauté until wilted and cooked. Set aside.
In a baking dish, add Tortilla wrap, layer bottom with shredded cheese, add tomatoes, sauteed vegetables, eggs, and top with remaining shredded cheese.
Place in oven for 25 minutes. Remove from heat, slice and ready to serve.
