Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 Can Bean Medley, drained and rinsed
  • 1 Yellow Bell Pepper, cored and diced
  • ½ Red Onion, diced
  • 2 Tsp. Mango Turmeric
  • 2 Garlic Cloves, finely chopped
  • ¼ Cup Fresh parsley, finely chopped
  • 1 Tbsp. Fresh Cilantro, finely chopped
  • ½ Lemon, juiced
  • 3 Tbsp. Oil
  • 1 Tsp. Red Chili Flakes, optional
  • Salt and pepper to taste

Directions

  1. Heat a pan, add 1 Tbsp. oil, once hot add cubed sweet potato, cook until browned on all sides and softened.
  2. In a large bowl combine bean medley, pepper, garlic, onion, and parsley. Then add cooked cubed sweet potato, lemon juice, cilantro, mango turmeric, red pepper flakes and top with 2 Tbsp oil, salt and pepper. Mix until fully combined and ready to serve.

