Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 Can Bean Medley, drained and rinsed
- 1 Yellow Bell Pepper, cored and diced
- ½ Red Onion, diced
- 2 Tsp. Mango Turmeric
- 2 Garlic Cloves, finely chopped
- ¼ Cup Fresh parsley, finely chopped
- 1 Tbsp. Fresh Cilantro, finely chopped
- ½ Lemon, juiced
- 3 Tbsp. Oil
- 1 Tsp. Red Chili Flakes, optional
- Salt and pepper to taste
Directions
- Heat a pan, add 1 Tbsp. oil, once hot add cubed sweet potato, cook until browned on all sides and softened.
- In a large bowl combine bean medley, pepper, garlic, onion, and parsley. Then add cooked cubed sweet potato, lemon juice, cilantro, mango turmeric, red pepper flakes and top with 2 Tbsp oil, salt and pepper. Mix until fully combined and ready to serve.
