In a pot, add oil, onion, garlic, Nantes Carrots, celery, sauté until vegetables have softened, add bay leaf, salt, and pepper.
Add Cherry tomatoes, lentils, vegetable broth, cubed sweet potatoes. Simmer for 50 minutes, until vegetables have softened, and lentils are cooked. Remove Bay leaf. Add cooked Barley, simmer for 10 minutes remove from heat and ready to serve.
