Ingredients

  • 1 Package Harvest Fresh Sweet Potatoes Veggie Sheets
  • 1 Lb. Chicken, ground meat
  • 1 Large Onion, finely chopped
  • 2 Garlic Cloves, finely chopped
  • 1 Cup Shredded Mozzarella Cheese
  • ¼ Cup Parsley, finely chopped
  • ½ Cup Tomato Sauce
  • 1/3 Cup Chicken Broth
  • 1 Tsp. Cumin
  • ½ Tsp. Dried Oregano
  • 1 Tsp. Chili Seasoning
  • Sour Cream, Sliced Jalapeno, Sliced Avocado, and chives, topping
  • Salt and Pepper to taste

Sauce

1 ½ Cup Tomato Sauce, Cooked

What You Need

Directions

  1. Place on a pan with parchment paper, add Sweet Potato veggie sheets, brush oil on both sides of each sheet, and place in the oven at 350 degrees for 15 minutes, or until soft. Let cool.
  2. In a large Pot, Add Sauce and cook for 5 minutes, until heated.
  3. In a large skillet, Add Onions, cook until translucent, add garlic and mix. Add ground meat, cook until golden brown. Add seasonings and mix well. Add tomato sauce, chicken broth and parsley. Cook for 10 minutes, until fully combined.
  4. Preheat oven at 400 degrees.
  5. In a round 9” Baking dish add sauce on the bottom, add sweet potato sheets to cover the bottom and sides.
  6. Add in Chicken Chili Mix, Mozzarella cheese in the centre and top with sweet potato sheets until fully covered and fold in the sides.
  7. Top with Sauce and shredded cheese, place in oven for 30 minutes, until Sweet Potato is fully cooked and soft.
  8. Top with Jalapeños, Avocado, and sour cream and ready to serve.
