Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 Package Harvest Fresh Pearl Onions
  • ½ cup Raw Harvest Poblano Peppers, chopped
  • ½ Cup Black Beans, drained and rinsed
  • ½ Cup Pomegranates or mangoes
  • 1 Avocado, Peeled and sliced
  • ½ Cup Corn, fresh or can
  • 2 Tbsp. Cilantro
  • ¼ Cup Pumpkin seeds
  • 4 Tbsp. Butter

Dressing

  • 1 Tbsp. Orange Zest
  • 3 Tbsp. Fresh Orange Juice
  • 6 Tbsp. Olive Oil
  • 1 Tbsp. Red Wine Vinegar
  • 1 Garlic, Finely Chopped
  • 1 Tsp. Dijon Mustard
  • 4 Tsp. Honey
  • 1 Tsp. Kosher Salt
  • ½ Tsp. Pepper

What You Need

Directions

  1. In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, drain and, let cool.
  2. In a pan on medium to high heat, melt butter, add pearl onions, cook until caramelized, add poblano peppers, and cubed sweet potatoes.
  3. In a bowl add cubed sweet potato mix, beans, corn, avocado, pomegranates, cilantro, and pumpkin seeds.
  4. In a bowl, add dressing ingredients, mix until combined. Add dressing to Sweet Potato Salad and ready to serve.
