Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 ½ cup water
  • 1 3/4 cup whole milk (divided)
  • 1 cup cornmeal
  • ½ cup shredded Mixed Cheddar and Mozzarella cheese
  • ½ cup grated Gruyere Cheese
  • ¼ cup cream cheese
  • 2 large leeks -white and light green parts, finely sliced.
  • 3 tablespoon salted butter
  • 2 granny smith apples, peeled, cored, and cut small chunks.
  • 1 Tbsp. fresh thyme leaves finely chopped.
  • 1 Tbsp. Honey
  • Salt to taste

What You Need

Directions

    1. In a pot, add water, cubed sweet potatoes, boil until soft and tender. Drain and let cool.
    2. In a pot, add cubed sweet potato, with ¼ cup milk, using Immersion hand blender, puree until smooth. Set aside.
    3. In a pot boil 1 ½ cup milk, 1/ ½ cup water, salt, and cover with a lid over high heat. Reduce heat to medium-low heat, add in corn meal, slowly and whisking. Continue to whisk, until thickens.
    4. Add mashed sweet potatoes, shredded cheese, gruyere cheese, cream cheese, and salt to taste. Whisk until combined. Turn off heat and cover pot with lid.
    5. In a skillet, add 3 Tbsp. Butter cover with lid on medium heat, until melted and foaming. Add in leeks, cover with lid, and cook stirring occasionally, until wilted. Remove lid add apples, thyme leaves and salt. Cook stirring often until apples have slightly softened, add honey, stir until fully combined.
    6. Remove from heat and put Sweet Potato Cornmeal mixture in a bowl, add Apple and Leek mixture on top and heat and ready to serve.
