Ingredients
- 1 Cup Harvest Fresh Cubed Sweet Potato, pureed
- 1/2 Package Harvest Fresh Spinach
- 2 ½ Cup White Flour, all purpose
- 1 Egg, beaten
- 1 Tbsp. Olive Oil
- 1 Onion, sliced
- 2 Cloves Garlic, finely chopped
- ½ Tsp. Salt
- Parmesan, topping
Directions
- In a bowl mix flour and salt, mix well.
- On a clean surface, add flour, making a well in the middle, add egg, sweet potato puree, mix until all combined, forming the dough into a ball. Add flour as needed.
- Sprinkle flour on your work surface, knead dough and form a circular ball.
- Cut the dough into 4 pieces, then roll each piece into long pieces about an ½ inch thick.
- Cut each roll into pieces, using a cheese grater, pressing slightly, and rolling each piece down.
- In a large pot of boiling water add sweet potato gnocchi, when cooked they will float to the top. In a Colander, drain the water.
- In a frying pan, add olive oil, onions, cook until translucent, add garlic, cook until fragrant, add sweet potato Gnocchi, sauté for 5 minutes. Then add spinach cook until wilted, add salt and pepper.
- Remove from heat, top parmesan cheese and chili flakes and ready to serve.
