Sweet Potato Gnocchi

Soup Ingredients

  • 4 cups Harvest Fresh Chopped Kale
  • 4 Harvest Fresh Nantes Carrots, diced
  • 2 Celery Stalks, diced
  • 1 Lb. cremini mushrooms, sliced
  • ½ Pkg. Bacon, cooked & cut
  • 6 Cups Vegetable Broth
  • 2 Tbsp. Olive Oil
  • 3 Garlic Cloves, minced
  • 1 Onion, diced
  • 1 Tbsp. Fresh Rosemary, finely chopped
  • 1 Bay Leaf
  • 1/3 Cup Heavy Cream
  • Salt and Pepper, to taste
  • Parmesan cheese, topping

What You Need

Directions

  1. In a bowl mix flour and salt, mix well.
  2. On a clean surface, add flour, making a well in the middle, add egg, sweet potato puree, mix until all combined, forming the dough into a ball. Add water as needed.
  3. Sprinkle flour on your work surface, knead dough and form a circular ball.
  4. Cut the dough into 4 pieces, then roll each piece into long pieces about an ½ inch thick.
  5. Cut each roll into pieces, using a cheese grater, pressing slightly, and rolling each piece down. Place on a baking pan and set aside.
  6. In a large pot on medium to high heat, add oil, onions, garlic, rosemary, carrots, celery, and sauté for 10 minutes, stirring occasionally, add mushrooms and sauté for 10 minutes.
  7. Add vegetable broth, and bay leaf, stir until fully combined, bring to a simmer, cover with a lid, and cook for 10 minutes on a low to medium heat.
  8. Add Sweet potato gnocchi, and kale, cook until gnocchi float to the top, or Kale has wilted. Add heavy cream and crispy bacon, season with salt and pepper, stir until combined.
  9. Remove from heat, remove Bay leaf and top with parmesan cheese and ready to serve.
