In a Skillet on high heat, add 2 Tbsp of olive oil, add onions, sauté until translucent, add cubed sweet potato, and sausage sauté, until sausage has browned, and sweet potato has softened, add salt, pepper, mix until combined.
Transfer sausage and sweet potatoes to a baking dish, add Kale super blend, spread evenly on top, set aside.
In a pot, add broth, 1/2 Cup milk, bring to a low boil, reduce to low heat and simmer, add flour and whisk, then add remaining milk to form thickness. Whisking to a smooth consistency, then add ¼ cup cheese, stir until melted.
Pour cream sauce in baking dish, fully coat sweet potato meat mix and top with remaining cheese, bake for 10 minutes, until cheese is melted. Remove from heat and ready to serve.
