Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 Cup Red lentils, rinsed
- 2 Cups vegetable broth
- ½ Cup Onion, finely chopped
- 3 Garlic Cloves, minced
- 1 Cup Rolled Oats
- ½ Cup Fresh Parsley, finely chopped
- 1 Tbsp. Olive oil
- 1 Tsp. Thyme, dried
- 1 Tsp. Paprika
- 1 Tsp. Salt
- ¼ Tsp. Black Pepper
- Parsley, for garnish
Directions
- In pot, with water, boil cubed sweet potatoes, until soft and tender. Remove from heat, drain and let cool.
- In a pot, add red lentils and vegetable broth, bring to boil, then reduce heat to a simmer, until lentils are soft and absorbed in liquid.
- In a large bowl, add boiled sweet potato, mash with a fork, add cooked lentils, garlic, onion, rolled oats, olive oil, parsley, seasonings, salt and pepper, mix until fully combined. Let mixture cool slightly, for easy handling.
- Using a scooper, scoop mixture form into patties and place on lined baking sheet. Freeze for 15 minutes.
- Preheat Oven at 400 degrees and bake for 15 minutes per side depending how thick on a lined baking sheet. Lightly spray with Olive oil both sides. Remove from heat and place on a hamburger bun or on our sweet potato waffle bun with your favourite toppings.
