Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 Cup Red lentils, rinsed
  • 2 Cups vegetable broth
  • ½ Cup Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 1 Cup Rolled Oats
  • ½ Cup Fresh Parsley, finely chopped
  • 1 Tbsp. Olive oil
  • 1 Tsp. Thyme, dried
  • 1 Tsp. Paprika
  • 1 Tsp. Salt
  • ¼ Tsp. Black Pepper
  • Parsley, for garnish

Directions

  1. In pot, with water, boil cubed sweet potatoes, until soft and tender. Remove from heat, drain and let cool.
  2. In a pot, add red lentils and vegetable broth, bring to boil, then reduce heat to a simmer, until lentils are soft and absorbed in liquid.
  3. In a large bowl, add boiled sweet potato, mash with a fork, add cooked lentils, garlic, onion, rolled oats, olive oil, parsley, seasonings, salt and pepper, mix until fully combined. Let mixture cool slightly, for easy handling.
  4. Using a scooper, scoop mixture form into patties and place on lined baking sheet. Freeze for 15 minutes.
  5. Preheat Oven at 400 degrees and bake for 15 minutes per side depending how thick on a lined baking sheet. Lightly spray with Olive oil both sides. Remove from heat and place on a hamburger bun or on our sweet potato waffle bun with your favourite toppings.

