Ingredients

  • 2 Packages Harvest Fresh Cubed Sweet Potato, pureed
  • 4 Eggs
  • 1 Cup Vegetable Oil
  • 2 ½ Cups Milk
  • 3 ½ Cups Flour, all purpose
  • 2 Tsp. Baking Powder
  • 2 ½ Cups Sugar
  • 2 Tsp. Vanilla Extract
  • 1 Tsp. Cinnamon
  • ¼ Cup Cocoa powder
  • ¼ Tsp. Salt

What You Need

Directions

  1. Using a hand blender, in a large bowl, add sugar and oil, blend until combined. Add eggs one at a time, vanilla extract, sweet potato puree, and cinnamon, blend well.
  2. In a bowl, add flour, baking powder and salt, mix well.
  3. In thirds, add dry ingredient, alternately with milk.
  4. In a Bundt pan add cooking spray, add ½ sweet potato mixture
  5. With remaining sweet potato mixture, add cocoa powder, blend well.
  6. Add Cocoa sweet potato mixture in Bundt pan, swirl mixture with a knife, for marble effect.
  7. Place in oven at 375 degrees for 50-55 minutes, insert a toothpick in middle, if toothpick comes out dry, loaf is ready. Let cool for 15 minutes, and ready to serve.
