Ingredients

  • 1 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 Cup Apples, chopped and peeled
  • 1 Banana, mashed
  • 2 Eggs
  • 1/4 Tsp. Salt
  • 1/4 Cup Chia Seeds
  • 1 Tsp. Cinnamon
  • 1/4 Tsp All Spice
  • ½ Cup Cashew Milk
  • ½ Cup Pecans
  • Fruit of Choice, topping

Directions

  1. Pre-heat oven at 350 degrees. Prepare a baking pan 8 x 8 lightly spray and place parchment paper.
  2. In a large pot, add salt, add Cubed Sweet Potatoes, boil, until soft and tender. Remove from heat, let cool. Mash Sweet Potato with a fork.
  3. In a small bowl, whisk eggs, add cashew milk and mix until combined.
  4. In a large bowl, add mashed sweet potatoes, mashed banana and mix until fully combined. Add egg mixture, chia seeds, apples, cinnamon and all spice, mix until fully combined.
  5. Pour mixture in baking dish, top with pecans evenly. Place in oven and bake for 30 minutes, until cooked. Allow to cool, serve with fruit and ready to serve.
