  1. In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, then drain well.
  2. Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add sugar, mix until fully combined.
  3. Crack eggs one at a time, whisk fully to emulsify.
  4. Slowly add evaporated milk, mixing, keeping consistent and smooth.
  5. Add melted butter, vanilla extract, cinnamon, and nutmeg. Using an electric mixer, on medium speed for 1 minute until mixture is fully combined and silky, using a spatula, scrap the sides, as needed.
  6. Fork the centre and sides of pie crust, then pour sweet potato mixture into pie crust and spread evenly.
  7. Bake at 350 degrees for 50 minutes, or until toothpick is inserted in centre comes out clean and let cool, ready to serve.

