Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 (9 inch) Pie Crust, unbaked
- ½ Cup Evaporated milk
- 2 Eggs, large
- ¾ Cup White Sugar
- 4 Tbsp. Butter, melted
- 1 Tsp. Vanilla Extract
- 1 Tsp. Cinnamon
- ½ Tsp. Nutmeg
Directions
- In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, then drain well.
- Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add sugar, mix until fully combined.
- Crack eggs one at a time, whisk fully to emulsify.
- Slowly add evaporated milk, mixing, keeping consistent and smooth.
- Add melted butter, vanilla extract, cinnamon, and nutmeg. Using an electric mixer, on medium speed for 1 minute until mixture is fully combined and silky, using a spatula, scrap the sides, as needed.
- Fork the centre and sides of pie crust, then pour sweet potato mixture into pie crust and spread evenly.
- Bake at 350 degrees for 50 minutes, or until toothpick is inserted in centre comes out clean and let cool, ready to serve.
