Ingredients

Avocado Cilantro Dressing 

  • 1 Avocado, ripe, chopped
  • 2 Cups Fresh Cilantro, with stems
  • 2 Raw Harvest Jalapenos, deseeded, no stem
  • 4 Garlic Cloves
  • ¼ Cup Lime, juice
  • 2 Tsp. Olive Oil
  • ½ Cup. Greek Yogurt, plain
  • Salt and Pepper to taste

Directions

  1. Pre-heat oven at 400 degrees, Line a baking sheet with parchment paper.
  2. In a bowl, add cubed sweet potato, oil, salt and pepper, mix until fully combined.
  3. Place cubed sweet potato on baking sheet and bake for 35 minutes until soft and tender.
  4. For tomato Salsa: In a bowl, add tomatoes, red onion, cilantro, lime juice and salt, mix until fully combined.
  5. For Avocado Cilantro dressing: In a blender add Lime Juice, Avocado, cilantro, jalapenos, garlic, Greek Yogurt, gradually adding olive oil, blend until smooth and creamy. Set aside
  6. In a bowl add baked cubed sweet potato, tomato salsa, cooked steak strips, top with avocado cilantro dressing and ready to serve.

