Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 Package Stir Fry Steaks, sliced strips, cooked
- 2 Cups Tomatoes, diced
- ¼ Cup Fresh Cilantro, chopped
- ½ red onion, diced
- 2 Tbsp. Lime Juice
- ½ Tsp. Salt
Avocado Cilantro DressingÂ
- 1 Avocado, ripe, chopped
- 2 Cups Fresh Cilantro, with stems
- 2 Raw Harvest Jalapenos, deseeded, no stem
- 4 Garlic Cloves
- ¼ Cup Lime, juice
- 2 Tsp. Olive Oil
- ½ Cup. Greek Yogurt, plain
- Salt and Pepper to taste
Directions
- Pre-heat oven at 400 degrees, Line a baking sheet with parchment paper.
- In a bowl, add cubed sweet potato, oil, salt and pepper, mix until fully combined.
- Place cubed sweet potato on baking sheet and bake for 35 minutes until soft and tender.
- For tomato Salsa: In a bowl, add tomatoes, red onion, cilantro, lime juice and salt, mix until fully combined.
- For Avocado Cilantro dressing: In a blender add Lime Juice, Avocado, cilantro, jalapenos, garlic, Greek Yogurt, gradually adding olive oil, blend until smooth and creamy. Set aside
- In a bowl add baked cubed sweet potato, tomato salsa, cooked steak strips, top with avocado cilantro dressing and ready to serve.
