Ingredients

  • 1 Bag Harvest Fresh Spinach
  • 1 ½ Cups Harvest Fresh Cipolline Onion, finely chopped
  • 4 Tbsp Butter, unsalted
  • 3 Garlic Cloves, finely chopped
  • 2 28oz Crushed Tomatoes, includes juice
  • 1 Red Bell Pepper, diced
  • 2 Cups Chicken Broth
  • ¼ Cup Fresh Basil, finely chopped
  • 1 Tbsp Sugar
  • ½ Tsp. Black Pepper
  • ½ Cup Heavy Cream
  • 1/3 Cup parmesan cheese, grated
  • Salt to taste

What You Need

Directions

  1. In a pot over medium heat add butter, add Cipolline onions, sauté stirring occasionally, until translucent, add garlic and sauté until fragrant.
  2. Add crushed tomatoes, pepper, chicken broth, basil, sugar, and black pepper. Stir until combine, bring to a boil then reduce heat, partially cover with lid and simmer for 10 minutes. Remove from heat.
  3. Using an immersion blender, blend until smooth then return blended soup to the pot over medium heat.
  4. Add Spinach, until wilted, heavy cream and parmesan cheese, return to a simmer. Season to taste with salt if needed.
  5. Garnish with Fresh Basil, parmesan cheese and ready to serve.
