Ingredients

  • 1 Package Harvest Fresh Riced Cauliflower
  • 3 Harvest Fresh Nantes Carrots, peeled and sliced
  • 1 Tbsp. Olive oil
  • 2 Garlic Cloves, finely chopped
  • 1 Onion, finely chopped
  • ½ Cup Green and Red Pepper, finely chopped
  • 1 Tsp. Garlic powder
  • 1 Tsp. Paprika
  • ½ Avocado, Sliced
  • ½ Mango, Sliced
  • ½ Cup pineapple, Chunks
  • Salt to taste
  • Lime Slice, Garnish

Dressing

  • ¼ Cup Coconut yogurt
  • ¼ Cup Pineapple, juice
  • 2 Tbsp. Lime Juice, freshly squeezed
  • 1 Tsp. Red Chili Flakes
  • *Optional use Dressing of preference

What You Need

Preparation

  1. In a skillet, on high heat add oil. Once the oil is hot, reduce to medium heat and add onions, garlic, peppers, Nantes carrots, continue stirring and cook for 7 minutes.
  2. Add Cauliflower Rice, salt, garlic powder, paprika, continue stirring for 3 minutes. Once cooked remove from heat.
  3. Prepare dressing, combining all ingredients in a small bowl, mix well.
  4. In a large bowl, Add Cauliflower Rice mix, avocado, mangos, pineapple, dressing and mix well. Garnish with a slice of Lime and red pepper flakes and ready to serve.
