  1. Preheat oven at 400 degrees.
  2. In a large bowl, add cubed sweet potatoes, salt, black pepper, and 3 Tbsp. Olive oil, mix well.
  3. In oven tray, add cubed potatoes and spread evenly on the pan.
  4. Place in oven, bake for 20 minutes, until fully cooked and set aside.
  5. In a large bowl, add chicken, salt, pepper, paprika, and 1 Tbsp. Oil, mix well.
  6. In a skillet, on medium to high heat, add butter, once melted add chicken, cook until browned, and cooked. Then set aside.
  7. In the same skillet, add onions and sauté for 3 minutes, add snow peas and cook for 5 minutes, until cooked. Then add roasted sweet potatoes, and chicken and cook for additional 2 minutes. Remove from heat and ready to serve.
