  1. Preheat oven at 375 degrees.
  2. In a large bowl, add cubed sweet potatoes, salt, black pepper, and 3 Tbsp. Olive oil, mix well.
  3. In oven tray, add cubed potatoes and spread evenly on the pan.
  4. Place in oven, bake for 20 minutes, until soft, set aside.
  5. In a Skillet on high heat, add oil, once oil is hot, reduce heat add garlic, onions, cook until translucent, then add mushrooms cook for 2 minutes, add Kale Super Blend, cook until slightly wilted, add Spinach and cook until wilted, add roasted cubed sweet potatoes, cook for one minute.
  6. Remove from heat, add egg whites, salt, pepper, and shredded cheese.
  7. Place in oven at 350 degrees for 30 minutes, until golden brown and fully cooked. Let cool and top with bacon pieces and ready to serve.
