Ingredients

  • ½ Package Harvest Fresh Kale Super Blend
  • 1 Cup Cremini Mushrooms, chopped
  • 1 Yellow, Green, Red Bell Pepper, sliced
  • 1 Cup Red Onion, Sliced
  • 3 Garlic Gloves, finely chopped
  • 1 Cup Cheddar and Mozzarella Cheese, shredded
  • ¼ Cup Parmesan Cheese
  • 12 Eggs
  • 4 Tbsp. Oil
  • Salt and Pepper to Taste
  • Bacon Pieces, Topping

What You Need

Directions

  1. Preheat oven at 375 degrees.
  2. In a bowl, add eggs, salt and pepper, whisk until combined, add shredded cheese and parmesan cheese, whisk until combined. Set aside.
  3. In a Skillet on high heat, add oil, once oil is hot, reduce heat add onions, sauté until translucent, add garlic, sauté until fragrant then add peppers mix until combined add lid on top, add mushrooms sauté for 2 minutes, add Kale Super Blend, sauté until wilted, with lid.
  4. Once vegetables are cooked and tender, reduce to medium heat and add egg mixture. Cook for 5 minutes.
  5. Place in oven for 15 minutes, until golden brown and fully cooked. Let cool slightly.
  6. Once cooled, slice a piece and add in your panini, and ready to serve.
