In a large bowl, add Riced Medley and microwave for 6 minutes, remove and let cool.
Using a clean dishtowel, drain Riced Medley, and squeeze out as much water as possible.
In a large bowl, add eggs, melted butter, Greek yogurt, and whisk well. Add Riced Medley, shredded cheese, salt and mix well. Then add flour, baking powder, parsley, and mix all together, until all combined.
Preheat oven at 400 degrees. Lightly spray a (6 cavity) muffin pan with cooking spray.
Using an Ice Cream Scooper, Scoop Riced Medley Mixture and place in each cavity and repeat until the batter is finished.
Place in oven for 20-25 minutes, until cooked or slightly browned. Remove from heat and let it slightly cool, and ready to serve.
