  1. Heat large skillet over medium-high heat.
  2. Bring chicken broth to a simmer, add beet and carrot spirals, toss to coat.
  3. Cover and simmer for 4 to 5 minutes, or until beets are tender, but still slightly firm.
  4. Transfer from skillet, and divide between serving plates.
  5. Top with Goat cheese, walnuts and fresh herbs, season with salt and pepper to taste.
