Veggie Spirals Supreme
What You Need
- Heat large skillet over medium-high heat.
- Bring chicken broth to a simmer, add beet and carrot spirals, toss to coat.
- Cover and simmer for 4 to 5 minutes, or until beets are tender, but still slightly firm.
- Transfer from skillet, and divide between serving plates.
- Top with Goat cheese, walnuts and fresh herbs, season with salt and pepper to taste.
