Ingredients
- 2 Packages Harvest Fresh Cubed Sweet Potatoes, smashed
- 1 Package Harvest Riced Cauliflower
- ½ Package Harvest Fresh Riced Medley
- ½ Tsp. Turmeric Powder
- ½ Tsp. Red Chili Pepper, crushed
- ½ Tsp. Ginger Powder
- 1 Tbsp. Potato seasoning
- 1 Tbsp. Chicken Bovril
- 1 Tsp. garlic powder
- 1 Tsp. Onion powder
- 3 Tbsp. Olive Oil
Dough:
- 2 Cups Flour, all purpose
- ¼ Cup Butter, melted
- ¼ Tsp. Salt, optional
- ½ Cup Water, add extra few tbsps. as needed
Directions
- For Dough: In a large bowl, add flour, butter, salt, and water, combine until dough is formed. *Don’t over knead, as dough needs to be stiff. Set aside and cover with a damp cloth.
- Samosa Filling: In a Skillet, on medium heat, add oil, riced cauliflower, riced medley, sauté for 5 minutes, until soft and tender, add mashed sweet potato, mix well, add seasonings, and chicken Bovril, mix until all combined. Remove from heat, let cool and set aside.
- Assembly: Spread dough on a clean surface, and using a cup cut dough into round circles 6” in diameter and 1mm thick.
- Form into a cone shape, seal outer edges and fill each piece with 1.5 Tbsps. of filling, pinch the corners to seal. Repeat for each, until dough is all used.
- Place in Air Fryer at 400 degrees for 10 minutes and golden brown.
