For Dough: In a large bowl, add flour, butter, salt, and water, combine until dough is formed. *Don’t over knead, as dough needs to be stiff. Set aside and cover with a damp cloth.
Samosa Filling: In a Skillet, on medium heat, add oil, riced cauliflower, riced medley, sauté for 5 minutes, until soft and tender, add mashed sweet potato, mix well, add seasonings, and chicken Bovril, mix until all combined. Remove from heat, let cool and set aside.
Assembly: Spread dough on a clean surface, and using a cup cut dough into round circles 6” in diameter and 1mm thick.
Form into a cone shape, seal outer edges and fill each piece with 1.5 Tbsps. of filling, pinch the corners to seal. Repeat for each, until dough is all used.
Place in Air Fryer at 400 degrees for 10 minutes and golden brown.
