Ingredients
- ½ Package (200g) Harvest Fresh Cubed Sweet Potato
- 4 Harvest Fresh Nantes Carrots, chopped rounds
- Veal Shoulder, chunks, boiled
- 1 Large Potato, chopped
- 1 Large Onion, chopped
- 4 Celery Sticks. chopped
- 2 Garlic cloves, finely chopped
- Parsley, fresh, bunch
- 3 Peeled Tomatoes, canned
- Cooked Pastina, optional
- Salt to taste
Directions
- In a pot, on medium heat, add water, add veal, using a fine mesh simmer, skim the scum for approx. 40-60 minutes, until scum is cleaned.
- In the same pot as the meat, add cubed sweet potato, potato, carrots, celery, onions, peeled tomatoes, parsley, garlic and salt. Mix well. Bring to boil. Then simmer and cook until vegetables have softened.
- Remove from heat, place in bowls, add cooked pastina and ready to serve.
