Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato, boiled
- 2 ounces cream cheese, less fat
- 1/4 cup Greek yogurt, plain
- 1 Tbsp. Milk
- 1 Tsp. Fresh Rosemary, finely chopped
- Kosher salt and black pepper to taste
- 4 slices bacon, cooked, crisp, crumbled
- 1 Package Tart Shells
- Chives, garnish
Directions
- Preheat oven at 350 degrees.
- In a food processor, add boiled cubed sweet potatoes, cream cheese, Greek yogurt, milk, rosemary, salt and pepper, purée until smooth.
- Place Tart shells on a baking sheet, bake for 8 minutes, remove from heat.
- Fill Tart shells with Sweet Potato filling, using a piping bag, and bake for 7 minutes, remove from heat.
- Top with bacon pieces and chives and ready to serve.
