Ingredients

  • 1 Cups Harvest Fresh Zucchini Spirals
  • 1 ½ Cup all-purpose flour
  • 1 Cup Ripe Bananas, mashed
  • 1 Egg, Large, room temperature
  • 1 Cup Sugar or brown Sugar
  • ½ Cup Canola Oil
  • 1 Tsp. Cinnamon
  • ½ Tsp. Vanilla Extract
  • ½ Tsp. Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp. Salt

Cream Cheese Filling:

  • 1 block Cream Cheese, room temperature
  • ¼ Cup Granulated Sugar
  • 1 Egg, room temperature
  • ¼ Cup, all-purpose flour

Directions

  1. Preheat oven at 325 degrees. Spray a 9” x 5 Pie loaf pan, line with parchment paper.
  2. In a bowl, whisk flour, sugar, baking powder, cinnamon, baking soda and salt.
  3. In another bowl, using a hand blender beat mashed bananas, egg, canola oil, and vanilla extract. Combine dry ingredient to wet ingredients, stir until combined. Fold in Zucchini.
  4. Cream Cheese Filling: In a bowl, add cream cheese, sugar, flour and egg, beat using a hand blender, mix until smooth.
  5. For Assembly: Place half of the zucchini batter in loaf pan, then place cream cheese filling over the zucchini batter, spread evenly until smooth. Place remaining Zucchini batter on top
  6. Place in Oven for 50 minutes, until placing a toothpick in center comes out clean and top is golden brown. Remove from oven, let cool and ready to serve.
