Ingredients
- 1 Cups Harvest Fresh Zucchini Spirals
- 1 ½ Cup all-purpose flour
- 1 Cup Ripe Bananas, mashed
- 1 Egg, Large, room temperature
- 1 Cup Sugar or brown Sugar
- ½ Cup Canola Oil
- 1 Tsp. Cinnamon
- ½ Tsp. Vanilla Extract
- ½ Tsp. Baking Powder
- ½ Tsp Baking Soda
- ½ Tsp. Salt
Cream Cheese Filling:
- 1 block Cream Cheese, room temperature
- ¼ Cup Granulated Sugar
- 1 Egg, room temperature
- ¼ Cup, all-purpose flour
Directions
- Preheat oven at 325 degrees. Spray a 9” x 5 Pie loaf pan, line with parchment paper.
- In a bowl, whisk flour, sugar, baking powder, cinnamon, baking soda and salt.
- In another bowl, using a hand blender beat mashed bananas, egg, canola oil, and vanilla extract. Combine dry ingredient to wet ingredients, stir until combined. Fold in Zucchini.
- Cream Cheese Filling: In a bowl, add cream cheese, sugar, flour and egg, beat using a hand blender, mix until smooth.
- For Assembly: Place half of the zucchini batter in loaf pan, then place cream cheese filling over the zucchini batter, spread evenly until smooth. Place remaining Zucchini batter on top
- Place in Oven for 50 minutes, until placing a toothpick in center comes out clean and top is golden brown. Remove from oven, let cool and ready to serve.
