Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- ½ Cup Red onions, finely chopped
- 1 Cup Mozzarella and Cheddar Cheese, shredded
- ½ Cup + 3 Tbsp. breadcrumbs, seasoned, divided
- ¼ Cup + 2 Tbsp. Parmesan Cheese, grated, divided
- 1 Garlic Clove, minced
- 2 Tbsp. Butter, melted
- 2 Eggs, beaten
- 1 Tsp. Parsley, fresh finely chopped
- 1 Tsp. Oregano
- Salt and Pepper to taste
- Herb Tomato Sauce, dipping, optional
Directions
- Preheat oven at 375 degrees. Lightly coat loaf baking pan with cooking spray.
- In a colander, add Zucchini Spirals, add salt, and set aside for 10 minutes. Pat dry with towel, until moisture is reduced.
- In a bowl, add Zucchini Spirals, garlic, egg, ½ Cup breadcrumbs, shredded cheese, ¼ Cup parmesan, red onions, oregano, parsley, salt, and pepper. Mix well, until fully combined.
- In a bowl, add butter, 3 Tbsp. Breadcrumbs, 2 Tbsp. Parmesan Cheese, mix until combined.
- Place Zucchini spiral mixture into mini loaf pans filling halfway to the top of cavity, then add butter and breadcrumb mix on top, and spread evenly.
- Place in oven, bake for 25 minutes, until golden brown. Remove from heat and ready to serve with marinara sauce.
