Ingredients

  • 1 Package Harvest Fresh Zucchini Spirals
  • ½ Cup Red onions, finely chopped
  • 1 Cup Mozzarella and Cheddar Cheese, shredded
  • ½ Cup + 3 Tbsp. breadcrumbs, seasoned, divided
  • ¼ Cup + 2 Tbsp. Parmesan Cheese, grated, divided
  • 1 Garlic Clove, minced
  • 2 Tbsp. Butter, melted
  • 2 Eggs, beaten
  • 1 Tsp. Parsley, fresh finely chopped
  • 1 Tsp. Oregano
  • Salt and Pepper to taste
  • Herb Tomato Sauce, dipping, optional

Directions

  1. Preheat oven at 375 degrees. Lightly coat loaf baking pan with cooking spray.
  2. In a colander, add Zucchini Spirals, add salt, and set aside for 10 minutes. Pat dry with towel, until moisture is reduced.
  3. In a bowl, add Zucchini Spirals, garlic, egg, ½ Cup breadcrumbs, shredded cheese, ¼ Cup parmesan, red onions, oregano, parsley, salt, and pepper. Mix well, until fully combined.
  4. In a bowl, add butter, 3 Tbsp. Breadcrumbs, 2 Tbsp. Parmesan Cheese, mix until combined.
  5. Place Zucchini spiral mixture into mini loaf pans filling halfway to the top of cavity, then add butter and breadcrumb mix on top, and spread evenly.
  6. Place in oven, bake for 25 minutes, until golden brown. Remove from heat and ready to serve with marinara sauce.
