Ingredients

  • 1 Package (400 g) Harvest Fresh Zucchini Spirals, chopped
  • 1 ½ Cups, Rotisserie Chicken, shredded finely
  • 1 Cup Shredded Cheese, mixed
  • ½ Cup Parmesan Cheese, grated
  • 2 Eggs, large
  • ¼ Cup Almond flour
  • 1 Tsp. Baking Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Italian Seasoning
  • Salt and Pepper, to taste

Directions

  1. Pre-heat oven at 375 degrees, lightly spray 12-cup muffin tin with cooking spray.
  2. In a large bowl, add zucchini, chicken, shredded cheese, parmesan cheese, eggs, almond flour, baking powder, garlic powder, Italian seasoning, salt and pepper. Mix until fully combined.
  3. Scoop Zucchini mixture evenly into muffin cups, filling ¾ to the top.
  4. Place in oven, and bake for 20 – 25 minutes, until muffins are golden brown. Remove from heat, let cool and ready to serve.
