Ingredients

  • 1 Package Harvest Fresh Zucchini Spirals
  • ½ Package Fettuccine pasta, cooked, optional
  • 1 Onion, thinly sliced
  • 3 Garlic Cloves, finely chopped
  • 1 Can diced Fire Roasted Tomatoes
  • 4 Fire Roasted Peppers, thinly sliced
  • ¼ Cup Parmesan cheese
  • 2 Tbsp. Olive oil
  • Red Pepper Flakes
  • Fresh Rosemary sprig, taken off sprig
  • 1 Tsp. Oregano
  • Salt and pepper to taste

What You Need

Preparation

  1. In a skillet, once hot, add oil, on medium heat sauté onions, until translucent, sauté garlic until fragrant, add red pepper flakes, Rosemary, diced tomatoes, parmesan cheese, mix until combined.
  2. Add zucchini spirals, sauté for 5 minutes, until soft and tender, add cooked pasta, season with salt and pepper. Mix until all combined. Remove from heat.
  3. Top with roasted peppers, Burrata cheese, slice open and drizzle with oil, oregano, and ready to serve.
