Pre-heat oven at 375 degrees, lightly coat round pie plate with cooking spray.
In a bowl, add oil, salt, and pepper. Whisk and set aside.
In a flat dinner plate, add breadcrumbs, parmesan cheese, and Italian seasoning. Mix until combined.
Coat Zucchini Sheets in oil, coat in breadcrumb mixture.
Once coated, lay zucchini sheets flat in pie plate, hanging over edges, forming a pie shape, add sausage, top with sauce, add Babybel cheese, fold zucchini on top and sprinkle with parmesan cheese.
Bake for 25 minutes, until cheese is melted and cooked, and ready to serve.
