Pre-heat oven at 350 degrees. Lightly spray a 9” baking dish with cooking spray.
In a bowl add eggs, milk, parmesan cheese, parsley, oregano, salt, and pepper. Beat well and set aside.
In the skillet, add butter, add onions, peppers, and mushrooms, add garlic sauté until fragrant, add zucchini spirals, cooked sausage meat and sauté until vegetables are soft, and tender. Remove from heat.
Once veggie sausage mixture has cooled, place in baking dish, add egg mixture and top with mozzarella cheese. Cover with non-stick foil and bake for 30 minutes.
Remove foil and bake on broil for 5 minutes to brown the cheese.
Remove from heat, let cool and ready to serve.
