Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- ½ Package Harvest Fresh Kale Slaw
- 1 Package Harvest Fresh Snow Peas
- 1 Red Bell Pepper, Sliced
- ½ Onion, finely chopped
- 2 Garlic Cloves, finely chopped
- ½ Cup Peanuts, chopped
- 3 eggs, beaten
- 3 Tbsp. Oil
- Cilantro, green onions, topping
- Lime wedges, garnish
Sauce:
- 1 Tbsp. Brown Sugar
- 3 Tbsp. Soy Sauce
- ¼ cup. Chicken stock
- 2 Tbsp. Rice Vinegar
- ¼ Cup Sweet Chili sauce
Directions
- In a bowl, mix all sauce ingredients, until combined.
- In a skillet, heat 2 tbsp oil, add onion, cook until translucent, add garlic, cook until fragrant, then add red peppers. Place peppers to one side of pan, add 1 Tbsp oil, add eggs, scramble with a spatula into small pieces.
- Add Zucchini Spirals, Kale Slaw, Snow peas, peanuts, and sauce, mix well, and sauté for 5 minutes.
- Transfer to a bowl, garnish with cilantro, green onions, and lime wedges and ready to serve.
