Ingredients

Sauce:

  • 1 Tbsp. Brown Sugar
  • 3 Tbsp. Soy Sauce
  • ¼ cup. Chicken stock
  • 2 Tbsp. Rice Vinegar
  • ¼ Cup Sweet Chili sauce

Directions

  1. In a bowl, mix all sauce ingredients, until combined.
  2. In a skillet, heat 2 tbsp oil, add onion, cook until translucent, add garlic, cook until fragrant, then add red peppers. Place peppers to one side of pan, add 1 Tbsp oil, add eggs, scramble with a spatula into small pieces.
  3. Add Zucchini Spirals, Kale Slaw, Snow peas, peanuts, and sauce, mix well, and sauté for 5 minutes.
  4. Transfer to a bowl, garnish with cilantro, green onions, and lime wedges and ready to serve.
