Ingredients
- 2 Package Harvest Fresh Zucchini Spirals
- 2 Tbsp. Olive Oil
- Parmesan Cheese, topping
- Red pepper flakes, optional
Pesto:
- 3 Cups Harvest Fresh Spinach
- 1 Avocado, peeled
- ¼ Cup Parmesan Cheese
- 2 Garlic cloves, chopped
- ¼ Cup Sliver Almonds
- 2 Tbsp. Lemon juice
- 1 Tsp. Salt
- Water, as required
Directions
- In a blender, combine all pesto ingredients, add some water to blend smoothly. Blend on high until smooth.
- In a skillet, add oil, Zucchini Spirals and cook for 2-3 minutes.
- In a bowl, add Zucchini, pesto and mix together.
- Place in a dish and top with parmesan cheese and red pepper flakes.
