Pre-heat oven at 350 F. Lightly spray an 8 x 8-inch baking pan with non-stick spray.
In a large bowl, add flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well with a stand mixer
In a large bowl, add egg, milk, oil, and vanilla extract. Mix well using stand mixer on low. When all combined increase speed for 3 minutes. Then add coffee a little at a time, until batter becomes thin.
Add Zucchini Spirals and mix with a spatula.
Pour batter into baking pan. Bake for 35 minutes, until a toothpick is inserted in the centre of the cake and comes out clean.
Remove from oven, allow to cool for 10 -15 minutes, and remove from pan.
When ready to serve, add chocolate syrup, vanilla ice cream and strawberries for topping.
